On April 19, local bread company Proof 419 will premiere three original bread recipes at the Toledo Farmers’ Market. Each of these recipes is based around Maumee Bay Beer, a favorite of co-owner Tucker Lux.
“Proofing” is a term used in bread making to describe the fermentation of yeast. Lux ties this term in with a quote from Benjamin Franklin, “Beer is proof that God exists and he wants us to be happy.”
“It’s been pretty well-received,” Lux said. “My wife and I were looking for a way to make some extra money. I’ve been obsessive about bread for quite a while, and she had the idea, since we’re both into craft beer, to try to make artisan breads instead of just doing things that have already been done.”
The business began as an experiment in which many beer-and-cheese combinations were tested in small batches. After narrowing down the three best combinations, Lux and his wife showed samples to Tim Childers, chef at the Maumee Bay Brew Pub, and he will soon integrate their IPA and sharp cheddar combination into his menu.
“It was a no-brainer to include it in our menu,” Childers said. “It will be available near the end of April.”
“The hops of the IPA really come through, and floral notes from the specific hop varieties,” Lux said. “Another favorite of mine is the Glass City Bread, which pairs Glass City Pale Ale with parmesan and crushed black pepper, which really blends nicely. Then there’s the Buckeye Beer with mild cheddar and smoked paprika, with just a hint of cayenne pepper to heat it up a bit.”
The company’s biggest challenge is operating from a home kitchen, which forces Lux to be creative in how he produces large quantities while retaining high-quality standards.
“When you’re just making one loaf, that’s one thing, but when you’re making 16 loaves at a time in a home oven, you have a few variables to work around,” Lux said. “We’ve been shopping at the market here for a long time and we’re excited to be able to get down there as vendors and do something that can help benefit the community by keeping it as local as we can.”
Loaves are available for $4 every Saturday at the Toledo Farmers’ Market, at the Erie Street Market.
